Do-not-have-to-be-a-baker GINGER AND CARROT CAKE


This cake will shoot you right down. Right off your feet. It’s that bloody good. Plus it is probably the easiest cake you’ll ever bake. It is moist, with a soft fiery ginger bite and a slight crunch. This cake is the knight with shining amour from The Land of Cakes. Oh come on, fall in love. Just try it.

The Recipe:

Preparation time: 15 mins

Baking time: 25- 35 mins

Equipment needed: Electric Mixer



250ml   White granulated sugar

250ml   Canola oil

3           Eggs, large

375ml   All purpose flour

10ml     Baking powder

5ml       Baking soda

10ml     Cinnamon

5          Bananas, medium sized, mashed

30ml    Fresh ginger, grated

500ml  Carrots, grated

125ml  Pecan nuts, chopped



1. Preheat oven to 180 Celsius degrees

2. Place all the ingredients in mixer. Mix for 2 mins at low speed; until combined.

3. Mix at high speed for 3 mins. Pour mix in greased cake tin. Bake for 25- 35 mins, or until a skewer comes out clean.

4. Cool cake. Dust with icing sugar/ cinnamon/ ice with cream cheese frosting/ top with fresh berries, figs or nuts.
