This cake will shoot you right down. Right off your feet. It’s that bloody good. Plus it is probably the easiest cake you’ll ever bake. It is moist, with a soft fiery ginger bite and a slight crunch. Preparation time: 15 mins
Baking time: 25- 35 mins
Equipment needed: Electric Mixer
250ml White granulated sugar
250ml Canola oil
3 Eggs, large
375ml All purpose flour
10ml Baking powder
5ml Baking soda
5 Bananas, medium sized, mashed
30ml Fresh ginger, grated
500ml Carrots, grated
125ml Pecan nuts, chopped
1. Preheat oven to 180 Celsius degrees
2. Place all the ingredients in mixer. Mix for 2 mins at low speed; until combined.
3. Mix at high speed for 3 mins. Pour mix in greased cake tin. Bake for 25- 35 mins, or until a skewer comes out clean.
4. Cool cake. Dust with icing sugar/ cinnamon/ ice with cream cheese frosting/ top with fresh berries, figs or nuts.
